3 eggs
1 c. oil
2 1/2 c. sugar
3 t. vanilla
1 t. salt
1 t. soda
1/4 t. baking powder
1 t. cinnamon
2 c. grated zucchini
3 c. flour
1 c. chopped nuts
chocolate chips
1. Combine oil, eggs, vanilla, and beat thoroughly.
2. Add sifted dry ingredients and blend well.
3. Stir in zucchini, nuts, and choc. chips.
4. Bake in 2 large loaf pans or 10 c. bundt pan, greased and floured. Bake at 325 for 60-70 minutes
Cool and drizzle with lemon icing:
1 t. melted butter
1 t. milk
1 t. lemon juice
1 c. powdered sugar
